So it turns out clip-path ALSO does not work on safari mobile... FML No mask no clip path, I could redraw it all and just leave the bits out but that is just painful and full of needless bloat. So I might redesign things a little so it works on safari... it just does not look as good.

Well they work in firefox perfectly now... I guess that is progress?!

So with the removal of custom light dark mode, there is only one SVG left with a mask. I could just redo this bit and it would fix this bug... Might do that.
